Matt + Betsy Borland
Rise N’ Brine was born from the shared passion of husband-and-wife duo Matt and Betsy Borland — a love for bold flavor, thoughtful hospitality, and food that brings people together.
Matt’s deep-rooted appreciation for culinary creativity and craftsmanship meets Betsy’s Thai heritage, where vibrant ingredients, layered flavor, and meaningful symbolism shape the way food is experienced. In Thai culture, dang means red — a color of energy, strength, and celebration — and green represents luck and prosperity. Those influences subtly thread their way through the brand, from the bold color palette to the intentional menu design and flavor-forward approach.
Together, Matt and Betsy believe that great food isn’t rushed. It’s crafted with care, built from scratch, and meant to be shared. What started with one pickle-brined chicken biscuit has grown into a neighborhood kitchen known for dang good chicken, carefully brewed coffee, and mornings that feel both elevated and welcoming.
For them, Rise N’ Brine isn’t just a restaurant.
It’s a table. A gathering place. A reflection of the cultures, creativity, and community they care deeply about.

The Man Behind the Shades: Coach Matthew Mitchell’s Influence
You can’t tell the full story of Rise N’ Brine without talking about Coach.
Matthew Mitchell — beloved women's college basketball coach, entertainer, and founder of the Coach Mitchell Band — isn’t just an investor. He’s family. Literally.
As Matt Borland’s brother-in-law, Coach Mitchell played a foundational role in launching Rise N’ Brine, offering more than just belief in the brand — he helped build it from the ground up. After just one bite of a chicken biscuit, he knew this had to be more than just a family breakfast staple.
Known for his bold energy, signature sunglasses, and unstoppable charisma, Coach became an emblem of the spirit that drives Rise N’ Brine: high-quality, high-flavor, and high-fun. His presence inspired more than just the business — he inspired the chicken in shades that now represents the brand’s attitude: bold, a little cheeky, and unmistakably memorable.
Rise N’ Brine channels the same confidence, entertainment, and quality that Coach brings to every room (and every breakfast table).
Because when it comes to chicken and coffee — like Coach on a mic (or the court) — we don’t flock around.
